廣州菜(又稱(chēng)廣府菜)是粵菜的代表,發(fā)祥地廣州,大凡用粵方言的地區(qū)都屬?gòu)V州菜文化圈。廣州菜集南海菜、番禺菜、東莞菜、順德菜、中山菜等地方風(fēng)味的特色,它注重質(zhì)和味,口味比較清淡,力求清中求鮮、淡中求美,而且隨季節(jié)時(shí)令的變化而變化,夏秋偏重清淡,冬春偏重濃郁。
